Lentils and peas are a great source of dietary fibre, low glycaemic index carbohydrates and protein, they are make a great team in a patty! This recipe is a healthy lunch or dinner idea teamed with a salad or vegetables.
This recipe is vegetarian, gluten-free and dairy free also. If you like your meat, add some shredded steamed or grilled chicken pieces to the patty mix or a little lean mince. Vegans can omit the egg or use a flax egg instead.
(Makes about 9-10 patties)
• 3/4 cup cooked lentils + 3/4 cup cooked peas
• 1/4 cup seeds e.g. chia, sesame, flaxseeds, pumpkin seeds
• 1/2 cup grilled or steamed sweet potato
• 1 small onion, finely chopped
• 2-3 garlic cloves, crushed
• ½ small carrot, grated
• 3/4 teaspoon cumin powder
• 1/4 teaspoon turmeric powder
• 2 tablespoons fresh coriander or basil leaves, finely chopped
• 1/2 small chilli, seeds removed, finely chopped (optional) or cracked pepper
• 1 egg (can use flaxseed egg alternative if you’re vegan)
• Salt to taste (1/2 – 3/4 teaspoon)
• ½ teaspoon oil
*You can add grated ginger for extra flavour but I didn’t have any
Method
• In a food processor put 1/2 cup each of the lentils and the peas, seeds, sweet potato, egg, garlic, cumin, turmeric, chilli/pepper, salt and process until smooth.
• Pour into a bowl and add all remaining ingredients except the oil and then combine well.
• Heat a non-stick large fry pan on low medium heat and add oil. Meanwhile form the lentil mix into 8cm diameter and 1cm thick round patties.
• Add the patties to the pan and cook on each side until golden and cooked through.
• Enjoy with a salad or steamed vegetables with a balsamic/lemon dressing (I made hummus and added a teaspoon on the patties, which went well)
