Red Quinoa Salad with Carrots

Quinoa is a South American nutritious gluten-free grain containing a variety of vitamins, minerals, a good amount of dietary fibre, low glycaemic index carbs and a little protein. It can be used in many ways including to make a salad. Try this one.

(Serves 2)

Ingredients

• 1 cup cooked red or regular quinoa (How to cook quinoa: http://www.thekitchn.com/how-to-cook-quinoa-63344)
• 1 medium carrot, grated
• ½ cup grilled sweet potato (I just grill it on the sandwich press)
• 1 medium cucumber, finely chopped
• ½ cup cherry tomatoes, halved
• ¼ medium Spanish onion, finely sliced
• ½ cup corn kernels
• Protein of choice – I used beans but you can used grilled chicken/meat, tinned tuna/salmon or eggs
• Pinch of salt and cracked pepper
• 1-2 tablespoons balsamic vinegar or lemon juice

Method

• In a salad bowl add all ingredients except the protein and combine well.
• Top salad with the protein or serve on the side. Enjoy for lunch or dinner!

Tip
• Quinoa can be cooked in a large batch and frozen in smaller portions, which can be defrosted when you want to use it.
